A cuisine
of natural state
Naturalness cuisine merely interprets nature’s generosity. Cuisine in the state of nature... But it takes a great deal of delicacy to bring brute nature to the table. The meticulous care the chefs extend to those the producers made from the outset. A cuisine made of contrasts and harmonies...

"D" like Durable “Naturalness cuisine is respectful of our planet's resources. Facing nature and cooking must be modest and adapt itself."
INSPIRATION FOR THE SHOJIN MENU Of Chinese origin, Shojin cuisine flourishes in Japanese Buddhist temples in the 7th century.

Its range of ingredients are limited to vegetables and cereals. Alain Ducasse has integrated certain elements and characteristic tastes of shojin cuisine in his vision of his restaurant at the Plaza Athénée.

"O" LIKE ORIGINS

"The chef must be content to interpret nature's generosity. Naturalness cuisine respects the original flavour of each product".

LUNCH MENU

Starter, main dish, dessert selected from the seasonal menu (except dishes with caviar) and 2 glasses of wine selected by the chef sommelier. 210 euros. On Thursdays and Fridays.
THE "JARDIN-MARIN" MENU

The "Jardin-Marin" menu is a concentrate of Naturalness and requires the very best of what the season has to offer. Three dishes as halves, cheese and dessert (395 €, drinks not included).
All our sea produce can be prepared in their strictest naturalness.
THE CABANE TABLE
An exclusive menu is provided for the Table Cabane, located in a monumental structure in the shape of a hull. Here, the tone is resolutely Bordeaux, the emblem of French wine expertise. The Sommelier personally met with the Maîtres de Chais, questioning them on their ideal of the archetype vintage. The result is a breath-taking selection: the most beautiful vintages from what is undoubtedly one of the most beautiful vineyards in the world.
